Vegan chocolate orange mousse, with lemon taste aquafaba. No sugar added.
200 gr aquafaba
1/2 tsp lemon zest
1 tsp apple cider vinegar
100 gr vegan dark melted chocolate
2 tbsp orange juice
1/2 tsp orange zest
1/2tsp cocoa powder
Pinch of salt
Aquafaba is the vegan whipped cream/chantilly/meringue made out of chickpeas water. Let's make it.
1. The night before tip into a bowl of dried chickpeas,and cover with plenty of cold water. Leave overnight to absorb water and swell.
Next day drain, add cold water twice the volume of the chickpeas in a pan or pressure cooker and cook.
Strain the boiled water from the chickpeas. Let the water cool completely. Put it in the fridge for a few hours before whipped it to meringue.
You can also do the process above 2 to 3 days before and preserve the chickpeas water, for aquafaba in the fridge.
Alternatively you can use the water of pre-cooked chickpeas in cans.
2. Use a hand electric whisk. Add in the meringue while beating the apple cider vinegar, and the fresh lemon zest.
The result is a fluffy, light, foamy, snow white, vegan whipped cream substitute, with a neutral taste.
3. Melt in low heat (bain marie), the chocolate, remove from the heat and add in the cocoa powder, the fresh orange juice, the orange zest and the salt.
4.Gently fold whipped aquafaba nto the chocolate mixture.
5. Cover the bottom of 3 small bowls with an orange slice. Pour the chocolate mixture in.
6.Let it cool and put it in the fridge for a few hours, such as to taste citrus and chocolate flavours to the maximum.
