Juicer Leftover Pulp Raw Bars

I often juice beetroot as it is one of my favorite juices. I add in carrots, green apples, and a thumb of ginger, through the juicer as well. The leftover pulp is sweet, earthy, fruity, and spicy, appropriate for many uses.
Bars are an alternative, as we can experiment with many different ingredients. Bars are also the best way to hide veggies, like beetroot, especially raw, and bars don't taste like beetroot at all.
Ingredients:
I used approximately 200-250 grams of beetroot, carrots, green apples leftover pulp.
2 tbsp homemade almond meal
2 tbsp oats
3 tsp Cacao powder
2 tbsp Coconut sugar
Lemon zest or vanilla aroma
Pistachios whole
Pistachios shredded
Process:
Mix into the blender the pulp, the almond meal, the oats the cacao powder, the sugar, and the lemon zest or vanilla.
Add in the whole pistachios {oprional}
Line up a form with parchment paper, pour the mixture, and press firmly.
Top the bars mixture with shredded pistachios. Press with the back of a spoon to stick the topping.
Refrigerate. It is better to consume the same day cause of the raw pulp in it.
Tips: When I first made the bars were spicy enough, cause of the ginger added in the juicer. Kids didn't like the spicy taste. You can collect the pulp of the veggies from the juicer, before adding the ginger.
It is perfect with the same ingredients for truffles.
